Most of the time people operate at a surface level of actions emotions and thoughts. Actions and emotions are based on certain thoughts or scripts of one's head and that these automatic thoughts are themselves based on deeply held beliefs. In other words what we believe leads to our thoughts which in turn drives our actions and feelings. The elder should be listening for the beliefs underneath and helping them grow.
