A quarter of a century later, it turns out that a great many people all over the world are being diagnosed with celiac disease and lots of them, myself included, are managing to stay on gluten-free diets. People are able to do this not because they are exceptionally good at self-control but because the news that gluten is toxic for them has shifted the reward values in their discounting equation.
